Our little experiments freezing dragon fruit (the Trader Joe's dried dragon fruit) is proving that not only is it fun to eat the crispy frozen dragon fruit right out of the freezer, but now even after a while in the freezer the dragon fruit is still as good as the day we got it. The verdict on freezing dragon fruit of the dried variety seems to be a resounding Not Guilty!
We've already had refrigerated dried dragon fruit kept in the refrigerator for months and months and months with no problems at all, so we know that does nothing to harm the dried dragon fruit. We had a little concern that maybe freezing dragon fruit (even dried) would mess it up, but so far so good. It seems that it is indeed a good way to store dragon fruit for long periods.
We've never tried freezing fresh dragon fruit.
